Chef Peter Paiva
Peter Paiva, Chef de Cuisine at Raw Bar, brings a diverse range of influences to his cooking at this popular restaurant located at Hotel Arts, Calgary’s premier boutique hotel. Born in India,Peter grew up on the shores of Newfoundland before heading out West to pursue his education. While taking a break from his education degree at the University of Calgary, Peter dabbled in the professional cooking course at SAIT Polytechnic, caught the passion and enrolled full-time to become a chef Throughout his studies, Peter worked as a breakfast cook with the Hotel Arts Group at the Kensington Riverside Inn at Chef’s Table (recently rebranded as Oxbow). After preparing delicious breakfasts in an intimate setting, Peter joined the banquet brigade at Hotel Arts where he rose to the Banquet Chef de Cuisine position serving meals from10 to 1500. After three years in that position, he took over the reins to the Raw Bar where he could further develop the bold flavours it is known for drawing on his extensive knowledge and range of experiences. Since taking the helm at Raw Bar, Chef Paiva has worked extensively with GM Franz Swinton to reposition Raw Bar as one of the premier cocktail lounges and resto-barsin Calgary. Peter has also worked extensively to showcase Raw Bar’s offerings at diverse events like the Women for Men’s Health Initiative Gala, Chowder Chowdown, YYC Burger Week and Chef Meets B.C. Grapes.
