Terrafina Fish Cakes

BC Wine Pairing:

Choose seasonal fish to make these scrumptious fish cakes and pair them
with Hester Creek Chardonnay


1½ lbs cooked salmon (or fish that is currently in season)
4oz cooked prawns (roughly chopped)
½oz minced garlic
Zest of 2 lemons
4oz minced shallot
10g fresh dill
1 tsp hot smoked paprika
1 tbsp garlic powder
½ tbsp onion powder
1 tbsp sea salt
1 tsp chili powder
1 tsp cumin
1 egg
12oz cooked and riced russet potatoes (approximately three potatoes)


Add water to a pot and bring to a boil
Wash, peel and cut potatoes into quarters
Add potatoes to the boiling water and cook until soft
Once cooked, remove from heat and set aside to cool
Place potatoes into a potato ricer (large garlic press) and press into a large bowl
Mix in the rest of the ingredients
Form into 3oz pucks and cook in a pan with oil on med/high heat until cooked through and crispy on edges
Serve on a plate of baby greens and chili aioli (optional)
